Day 33 {A McDougalling We Will Go}

We are holding at just 53 pounds down total for the two of us.  What’s a person to do when they hit that plateau?  We decided to fast for one day to see if that might boost us (it did not), so today we will resume normal eating (feasting on delicious vegan fare).  Today we are doing something new! We have decided to make Potato Tacos and we are attaching our improvised recipe, these are picky eater approved and AMAZING!!

Although we have hit a weightloss plateau, we are definitely still seeing all the health benefits!  Homme’s gerd has completely gone away! Our cholesterol has dropped immensely. We feel altogether different than the days we feasted endlessly on meat and fats like European royalty once did.  As our health has improved, our outlook has improved as well! Our mental clarity has improved, energy levels are up, and we feel that as we are learning and creating more and more recipes this new lifestyle will become easier and easier!  Here’s to another day of health and happiness for all!

Potato Tacos

Grab your cast iron (and some parchment paper), you’re gonna need it!


  • 1 cup Panko Breadcrumbs
  • 1 pkg Taco Bell Taco Seasoning
  • 10-12 Melissa’s Baby Dutch Yellow Potatoes (or any small variety potato smaller than a ping pong ball, bakers don’t work for this)
  • Avocado
  • Lettuce
  • Tomato
  • Whole Wheat or White Soft Taco Shells (we use BURRITO STYLE larger ones)


Preheat Oven to 425*F

DICE the Yellow Dutch potatoes and put them aside in a bowl of water.

img_5181Pour 1 cup Pank Breadcrumbs and 1 package Taco Bell Seasoning into a food processor with a large pinch of salt. Blitz this until it is more finely ground (think….shake n bake).  Shake this until all the potatoes are well coated, dump onto parchment lined cast iron baking sheet.

In a large 1 gallon bag Place:  The seasoned breadcrumb mixture and the Potatoes and shake until the potatoes are well coated.  Dump these out onto a Parchment Lined cast iron pan or baking sheet and place them in the oven.  Cooking time will vary by the dice size (ours took about 30 mins).

In a large cast iron skillet warm tortillas for wrapping.

Wrap the Potatoes into the tortilla with your choice of toppings and devour because they’re THAT good!

For Toppings (Prep these immediately before plating so they do not turn color)

  • Dice 1 avocado
  • Dice1 tomato
  • Shred 1/4 lead of lettuce
  • Texas Pete or Taco Bell Hot Sauce 

Additional Topping options that must be prepared in advance and would be wonderful (we know because we tried them with this recipe) are Guacamole, Refried beans,  and Mexican flavored rice (we buy this prepackaged).

Guys this recipe is McDougall Plan Approved (by us anyway)! There are natural fats found in the avocado and the tortillas contain a minimal amount of fat (just 5 grams per tortilla). You may be able to find lower fat tortillas (we couldn’t). This makes for a hearty lunch or dinner and oh so so satisfying!!
