Avocado Vinagrette {Oil Free, McDougall Approved}

So it’s no surprise that we love great Mexican food here at the Les Deux Gourmand home! We’ve been seriously struggling with finding a salad dressing that would be suitable for our vegan taco/fajita salads and we hit the jackpot with this one!  It does contain fat (bc avocados contain fat), so we do recommend limiting it to a 2-3 tablespoon max serving.  


Ingredients

  • 2 avocados
  • 1/2 tomato
  • 1 clove garlic
  • 1 to 1.5 cups veggie stock
  • 1 tsp Jalapeno Salt
  • 1 tbsp Apple Cider Vinegar

Blitz this in the ninja until you’ve reached the creamy heaven that is this amazing dressing and then toss it with your salad! It’s like a heavenly smooth guacamole style vinaigrette.
