We are still continuing to lose weight at a steady pace! Which is shocking when oneconsiders just how much food we consume each day!
One of our favorite meals prior to going on the McDougall Plan was a good lowcountry boil. What could be better than seafood, sausage, potatoes, onion, and corn on the cob all boiled together with good ol’ Old Bay Seasoning? Not much, that’s what! So when we decided to go on this oil-free vegan meal plan we knew we were giving that up…..until now! Check out our Vegan Lowcountry Boil below!
Vegan Lowcountry Boil
- 6 quarts water
- 2tbsp Maldon Sea Salt Flakes
- 1/2 c Old Bay Seasoning
- 4 Pounds Red Potatoes Halved
- 12 pieces corn on cob (cut into quarters not whole)
- 2 onions quartered
Bring Water, Salt and Old Bay to a rolling boil then add red potatoes and onion.
Allow to cook for 15 minutes at a rolling boil, AFTER the first 15 minutes add the corn allow it to return to rolling boil for 7 minutes if fresh raw corn, 10-12 minutes if it is frozen corn.
